We love salads and Asian flavors. Throw in a tropical mango and we could not resist! This recipe is so yummy and very easy. Double or triple it for a party aboard.
Salad
Assemble the salad in a medium-sized bowl:
- 1 ripe mango, cut into strips
- 2 chopped green onions
- 1/4 cup chopped sweet red bell pepper
- 1 cup bean sprouts
- 1/4 cup sliced red onions
- 2 tbsp chopped cilantro or parsley
Dressing
Mix below ingredients and toss in salad.
- 2 tbsp Thai sweet chili sauce
- Zest and juice of half a lime
- 1/2 tsp grated ginger (substitute: 1/8 tsp of garlic powder)
- 1/2 tsp minced garlic
- 1/2 tsp low sodium soy sauce
- Salt and pepper to taste
Experiment! We added cooked rice noodles.
