The Smoked Oyster Cheese Roll recipe is quite simply delicious and it looks really fancy even though it is rather simple to make! The smokey flavor of the oysters balances the rich creaminess of the cheese perfectly, while the nuts add a hint of sweetness and lends a nice crunchy finish. Serve with some crackers and a nice white wine or champagne alongside this wonderful appetizer and you have a winner!
This recipe is from one of my best friends Monica, who is quite possibly the best hostess I know. She makes entertaining appear so effortless and all of her friends always marvel at her grace and charm…the true Southern Belle (even if she wasn’t born in the south). She managed to wheedle this recipe out of a chef at a wine tasting in Sonoma Valley. Monica has graciously passed the recipe on to me and I use it often as a quick and easy go-to appetizer to wow my guests.
INGREDIENTS
- 1 Clove crushed garlic16 ounces softened cream cheese
- 1 Tbsp Mayonnaise
- 1 Tbsp Milk
- 2 tsp Worcestershire Sauce
- 1/4 tsp Salt
- 1/8 tsp ground White Pepper
- 1 dash Tabasco
- 2-3 ounce cans Smoked Oysters, drained
- 1/2 cup finely chopped pistachio nuts
- Crackers
Instructions
In a food processor mix garlic, cheese, mayo, milk, Worcestershire, salt, pepper, and Tabasco until well blended. Spread into 8x 10 rectangle on a foil-lined baking sheet. In same bowl, puree or mash oysters. Spread over cream cheese mixture. Cover loosely with plastic wrap and refrigerate for several hours until firm. Use long, narrow spatula to help release from the foil and roll up like a jelly roll. Don’t worry if it cracks or breaks. Shape into long log. Roll log in pistachios until completely covered. May be wrapped in plastic wrap and refrigerated for up to 3 days. Serve with crackers.
