For many, it is just not Fall without a steady dose of pumpkin spice.

Since Starbucks has not put in “sail-through” ordering yet (LOL), we asked Wanda Anglin of SEO Buzz Internet Marketing to share her favorite ways to enjoy this Fall favorite with some easy-to-make recipes.

Pumpkin Spice Russian

Instead of turning your Black Russian, White, turn it Pumpkin Spice!

INGREDIENTS (per serving)

  • 1 shot glass vodka (1.5 oz)
  • 1 shot glass pumpkin spice coffee creamer (1.5 oz)
  • 1/2 shot glass Kahlua (3/4 oz)
  • Ice

DIRECTIONS

  1. Serve alone in a highball glass or with a cinnamon stirring stick or a dollop of whipped cream.
  2. If you want to serve with a layered look, place ice, vodka, and Kahlua in the glass and stir, then slowly pour the cream over the back of a spoon to “float” it on top.
  3. Or make a whole pitcher full with even amounts of vodka and creamer and half as much Kahlua!

Crustless Pumpkin Pie

Making a pie crust or storing a frozen store-bought crust is just not worth it aboard a boat…not if you can make this traditional favorite crustless!

INGREDIENTS

  • Cooking spray
  • 1 (15-oz.) can pumpkin puree or scant 2 cups of mashed sweet potatoes!
  • 1 c. heavy cream
  • 3/4 c. packed brown sugar (can use erithrytol or Bochasweet sweeteners)
  • 3 large eggs
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  • 2 T pumpkin pie spice OR
    • 1 tsp. cinnamon
    • 1/2 tsp. cloves
    • 1/2 tsp. ground ginger
    • 1/4 tsp. nutmeg

DIRECTIONS

Step 1

Preheat oven to 325°. Spray a 9” pie plate with cooking spray. In a large bowl, whisk all ingredients. Pour into pie plate and smooth.

Step 2

Bake pie about 1 hour until center slightly jiggles. Turn off oven and prop door open with a wooden spoon and let cool in oven, 1 hour. This keeps your pie from cracking…pro tip!

Step 3

Refrigerate until set, at least 4 hours.

Step 4

Serve with hot coffee and a little whip cream if you like.
