Paleo Pancake

We helped Kathy and Jim Sullivan buy a Leopard 48, Jimkat, in 2018. They liveaboard and work remotely as attorneys. And they are passionate about food. We follow their shared recipes closely as they are always delicious.

Even old salts are trying to eat healthier these days so we thought a grain-free pancake would be a non-inflammation causing treat for your galley!

Kathy says: “PS: the arrowroot made them grainy and (to me) unpleasant, I would definitely recommend tapioca flour instead…I’ve also heard that cornstarch can be substituted, as well as rice flour, but I haven’t tried either of those substitutions:)”

Ingredients

  • 2 Tbsp coconut oil
  • 2 Tbsp honey
  • 1 c almond milk
  • 1 tsp cider vinegar
  • 5 large eggs, whisked
  • 1/4 c packed almond flour
  • 1/2 c coconut flour
  • 1/2 c tapioca flour OR arrowroot (the latter has fewer carbs in case you are watching those)
  • 3/4 tsp baking soda

Instructions

  • In a small bowl, place all dry ingredients (flours and baking soda). Mix thoroughly.
  • In a glass mixing bowl, melt the coconut oil with a few seconds in the microwave, if needed. Mix in honey, almond milk, vinegar, and eggs.
  • Add bowl of dry ingredients to the wet mixture and mix just until combined.
  • Drop on a hot griddle or skillet. Turn when edges firm.
  • Serve with your favorite syrup. Or roll around a sausage for pigs in a blanket!
